Notes: We’ll do an abundant tasting and the rest of the food will be taken home. Please bring some containers. 🙂
This Sicilian cooking workshop demonstrates how the island’s cuisine is the result of an amazing melting pot: Sicily has hosted lots of different populations (Phoenicians, Greeks, Arabs, Normans and so forth) and the richness of her cuisine is therefore immense.
We start with polpettine di ceci, crunchy fried chickpea and pecorino balls, then we move further with some wonderful involtini di melanzane con spaghettini, grilled aubergine rolls stuffed with thin spaghetti in a rich tomato & salted ricotta sauce. The ravioli ricotta e menta with a spicy sauce made with raw tomato is another great dish that will make everybody happy. We then proceed with the surprising fuazza agli spinaci, a rolled-up focaccia stuffed with spinach, olives, garlic and lots of pecorino cheese. Zucchine in salmoriglio (fried courgettes with a green salmoriglio sauce made with garlic, lemon and fresh herbs) and patate a sfinciuni, a rich potato, onion and oregano tart, are the other very satisfying dishes.
Sicilian almond cookies and olivette di Sant’Agata (little “olives” made with sugar and almond meal) are our sweet treats. Great Sicilian wine will of course complete our menu and help us appreciate even better the wonderful cuisine of this amazing island.
